Sandwiches are not only for picnics. You can make interesting and attractive healthy sandwiches by making good use of the variety of breads available; and with the right dressings, fillings and garnishes, they make super meals.

Be creative

Creativity in making sandwiches is the key to success. You can use sandwiches for appetizers, breakfasts, lunches or snacks. Vegetables and fruit can play a nutritional role as well as meat, fish or shellfish.

Sandwich tips

Make good use of the variety of breads available on the market. There is white, whole wheat, pumpernickel, rye and a variety of others. You can also use rolls, English muffins, and French and Italian bread. Biscuits and crackers also make good sandwiches. Spread margarine, butter, salad dressing and fillings to the edges of the bread. Cut sandwiches with a sharp or serrated knife.

Try some of the following dressings and fillings.

Breadless sandwiches

  • Wrap some thin slices of ham or cold meat around slices of melon.
  • Wrap lettuce leaves around sticks of cheese.
  • Split sausages lengthwise and fill with thin slices of cheese or with mayonnaise and chopped vegetables.

Sandwich fillings

With some fresh home-made bread, French or pita bread, or whatever bread you prefer, try these fillings:

  • Cheese and tomato: Mix some finely chopped onion into a cheese spread. Alternate the mixture with slices of tomato in sandwich bread or a roll.
  • Anchovy and cheese: Spread sandwiches with a mixture of two level tablespoons of creamed butter, half a teacup of grated cheese and 1 teaspoon of vinegar mixed together. Add a bit of paprika, dry mustard and anchovy essence to taste, or mashed anchovies.
  • Spiced cheese: Mix together half a teacup of creamed butter and the same quantity of grated cheese. Season with a pinch of cayenne pepper, a pinch of mixed spice, and a few drops of Worcester sauce.
  • Banana and cheese: Spread sandwiches with slices of ripe banana. Sprinkle with grated cheese.

More fillings

  • Lamb with mint; ham with mustard; salami with olives; soft cheese with chopped celery, grated apple, chopped nuts; or pickles with chutney, prawns and mayonnaise.
  • Try some sandwich spread with chopped meat or eggs; sardines with chopped watercress; scrambled eggs with cheese or chutney, smoked fish, diced bacon or mushrooms and a little curry powder.
  • Try hard-boiled egg slices with mayonnaise and chopped raw peppers; flaked crab meat alone or mixed with white sauce or deviled with a little Worcester sauce and mace.
  • Or try salmon with cucumber slices and lemon juice, liver paste, or cold beef with a little horseradish sauce.

These ideas should open your creative mind to a host of other ideas for ingredients you have in your pantry. Be creative and have fun creating great, nutritious sandwiches for you, your family and friends.
